Chef Mariela Bolaños first came to Viand in 2005 as a line cook and has worked her way up the ranks distinguishing herself as a Sous Chef before recently being promoted to Executive Chef. She discovered a deep passion for cooking at a young age throughout her years of travel to Mexico with her family being able to see the rich culture and native ingredients that every dish has to offer.
Prior to working at Viand, Bolaños held a garde manger position at Café Elise in Munster, Indiana. After graduating from the Culinary Arts Institute of Chicago in 2006, Mariela landed her first professional kitchen job under Chef Steve Chiappetti where she further learned to develop her cooking abilities.
At our Mag Mile Restaurant, Chef Bolaños enjoys creating a fusion of dishes with authentic ingredients from different cuisines and incorporates local farmer and artisan products to produce high quality guest satisfying menu items. Mariela manages a staff in which she mentors, trains, and motivates daily to keep all operations running smoothly and ensuring all food is at the highest quality possible.
